Healthy-ish pudding

I’m never sure how healthy pudding can ever be, but I know that panna cotta is bad for you, so when I clocked a Buttermilk Cream recipe by Angela Hartnett I thought it was worth giving it a go. Like panna cotta it uses dairy and gelatine to make a smooth comforting desert but uses buttermilk and low fat cream to lessen the calories a little. Apple juice is also used as a sweetener and only a fairly small amount of sugar.

The desert was very quick to make, but does need to chill in the fridge until set. Whilst it is a different beast to panna cotta, the result was a lovely silky textured pudding with enough tang from the butter milk and apple juice to prevent it being cloying or feeling too heavy. It made a great end to a meal, as it didn’t leave me feeling weighed down or sleepy. I’m not sure how healthy it is but it felt like a lighter option at the end of a meal.
