Tiny Butternut squash

This is our second year trying to grow butternut squash, last year slugs got the plant but this year something grew and didn’t get eaten but was tiny!

I was going to stuff the squash, but on cutting it open that clearly wasn’t going to happen so I simply roasted it and served it with Cajun dirty rice. Traditional recipes for dirty rice contain chicken livers but I substituted them for some sausages we had hanging around in the fridge.

I skinned the sausages and fried the meat with onion, green pepper and cooked rice. Seasoned with Cajun seasoning and a little marmite for added umami. Served with some grated pecorino sardo with chilis it was a warming autumn dinner, if a bit rustic looking.
